Effectively monitor cheese making equipment including but not limited to; cooker/stretchers, rotary molder / chillers (RMC’s), analyzing equipment & cleaning equipment. Record & interpret data to make informed decisions and / or recommendations for optimum cheese making conditions. Follow make plans & make adjustments & changes to equipment as necessary. Communicate with upstream & downstream operators to ensure accurate identification of individual vats & recipes. Clean all related equipment as needed to ensure sanitary conditions.
Function as an integral part of the cooker clean up crew between production runs. Perform assigned Master Sanitation duties.
